About Bartons
Bartons isn’t just a coffee shop — it’s a Bermondsey institution. Situated near Tower Bridge in one of London’s most vibrant communities, we’re known for great coffee, good vibes, and high standards. We’ve built a loyal local following and need a skilled Head Barista to help lead our passionate front-of-house team.

The Role
We’re looking for a confident, experienced Head Barista who can keep standards high, lead a team with clarity, and thrive in a busy environment. You’ll be responsible for the daily running of the coffee bar — from calibration and workflow to team morale and customer satisfaction.

Key Responsibilities

Coffee Standards
Dial in espresso daily, adjusting grind, dose, yield, and time as needed.
Ensure consistent espresso quality through regular calibration and tasting.
Master milk texturing with perfect microfoam for both taste and art.
Confident in latte art (heart, rosetta, tulip, swan preferred).
Understand bean origins, roast profiles, flavour notes.
Familiarity with V60, AeroPress, and batch brew methods.
Maintain and clean machines daily (backflush, gaskets, pressure checks).
Work confidently with La Marzocco machines, Mythos 1, and Mahlkönig grinders.

Team Leadership

Set clear expectations and lead by example.
Delegate effectively and ensure all team members stay productive.
Deliver on-the-job training and mentoring to junior baristas.
Manage breaks based on flow of trade.
Handle customer issues calmly and professionally.
Maintain a tidy, logical bar with efficient workflow.

Front-of-House Standards

Ensure fast, friendly, and consistent customer service.
Monitor cleanliness, clear tables promptly, and keep the shop looking sharp.
Take initiative during quiet periods — cleaning, prepping, or training.

Operations

Handle daily open/close, including float checks, setup, and clean-down.
Manage stock levels, order supplies, and reduce waste.
Help maintain accurate records and support compliance where needed.

What We're Looking For

Minimum 4 years barista experience, including leadership.
Strong espresso, milk, and machine skills.
Calm, confident, and organised under pressure.
A fair, direct, and professional management style.
Enthusiastic about coffee, people, and high standards.
Experience using La Marzocco, Mythos 1, Mahlkönig (or similar equipment).
